At first we should konw the recipe of hot dog sausge.normally,it contains lean meat,fat,starch,sugar,salt,isolated soy portinespices and ice water.According to different quality requirment,the quantity of each ingredient is different.The general processing flow is:put all the ingredients except starch into the bowl chopper to get emulsion.Then,add the starch into the butter.When the temperature raised at 12C,we can stop chopping.The meat emulsion will be stuffed into celloluse or collagen casing.finally,the sausages will be cooked in the smoke house.After cooling with water,we get the hot dog sausage.
